I've used something much more basic than that to calibrate multiple ESCs at once. Just a 1-8 homemade harness, but I've never had any issues. I would think you'd be fine.

You really need to check what those motors/ESCs are capable of - in conjunction with your batteries. Do that before you lay out any cash for 17" props. I'm over in Williamsburg. Just moved back after a couple years away.

I also think the battery situation needs to be sussed out. No reason it should be dropping to that low a voltage after so short a time. That tells me there may be something going on in the initial design for thrust to weight.
