It's for sure the brake unless you are shorting the phases somewhere. Did you by chance ever clean the esc's with contact spay. I know that MK sells this stuff. It leaves an almost invisible film that is conductive and will kill your boards.

I doubt that as I would expect it to be a direct drive system with a high sensitivity imu. When you place the imu on the camera mount and use a gear drive any servo opposite reaction movement will be seen by the imu and cause an oscillation. So gains have to be min. Alware seem to be making some good cheap small stuff. No idea how well it works but that is as much about the imu and set-up as anything.

I believe the DJI will have a separate camera imu. That would make sense.
