Some of the cheap plastic props (hobby king) have been known to come apart mid-flight.

Well, if you're doing some searching and research before posting, you're off to a good start :) Obviously it's good to search first - but feel free to ask away. There are some pretty patient folks around here.

Specific? Like cut to shape or something? That's trick. I don't mind snipping the shim stock myself - and that way I have a ton of spare thickness etc.

You could also shim the motors. McMaster has a pretty reasonable shim stock pack with plenty of sizes and more than you'd need.
