Time to start a new build (with help)

Not sure this is the right place to post but I'll give it a shot.

Since I have made up my mind to get a pre-ordered Yuneec Typhoon H for my Video drone and
a couple of starter (learning) drones:

Potensic® Upgraded X5C-1 Syma Explorer 2.4GHz 6 Axis Gyro 4CH RC Quadcopter with 2 Megapixels Camera

and

I also bought a Fly Sky T6 because of the good reviews but I also want a i10 to go with my new build.

I have plenty of battery chargers (been working with LiPo's and LiOn for years)
I have been in Electronics most of my adult life and am good with mechanics and a fair programmer, although I really don't want to go that far because my brain is getting old.

I think it's time to get started building my own from scratch.
I have no clue where to start.

I was looking at getting a frame first. I guess maybe a 300-400 size but I am not even sure that's where I need to start. I want to build up to getting all of the better parts to assemble this thing. I would imagine by the time it will take to assemble it all I will know a lot more about this hobby.
Buying a kit is not out of the question as long as I can customize it as I see fit (interchangeability is the word of the day)

I am close to retirement so I will have plenty of time but I want to get started because you just never know what tomorrow will bring.

Any thoughts?

I retired last year. Year before that I had been flying Trex 550 heli rigged for FPV. I had been flying helis for about 4 years though. Decided I needed a much better platform for jello free video etc and bought a QAV540G frame from GetFPV and used recommended motors, ESCs and gimbal controller. Started with Spektrum receiver but have gone to EzUHF for reliability and stayed with Immersion RC 5.8 GHz as was easiest at time and fit with ground station I had built when flying the heli. I used a Fatshark video camera. I preordered and finally got one of the first Vector controllers and still completely say it is great.

There are other bits and pieces like a video switch so I can see where the GoPro on the gimbal us aimed but all was fairly easy for me and I am still using the QAV. GetFPV makes a newer version of the frame I bought snd there are other good frames around including smaller ones. Buying from place like GetFPV or ReadyMade RC has lots of advantages as you get support and help in picking out the configuration. Just do it!!

A flame wheel 450 (quad) or 550 (hex) is a very popular frame. Parts are very common, there are tons of them flying so there are a lot of good build videos on you tube and even here. price is affordable.
