S800 throttle settings help

Hey gang, I've got an S800 we are using for aerial photography. I'm using a Futaba 8FG for S800 control and we have a 7C for Zemuse gimbal control for a GH3 camera. We have the camera controls set very nicely but I am usually the pilot and I cannot seem to find a throttle setting where I can ease into an elevation change either going up or down. It's almost like the S800 moves up and down in steps. I want control to be very subtle when I first move the throttle up or down and then get progressively stronger for those moments where I need lots of throttle.

I'm sure it used to be better before we went to the new Wookong flight control, with the IMU 2, which stopped oscillating crashes, thank goodness. I've tried different curves for the throttle in the Futaba but don't seem to feel much difference. Would appreciate help from a seasoned aerial photography pilot out there.
