I was thinking of building a 250 sized quad, but not a racer. Basically, an F450, but smaller. Something a little more tame, perhaps gps, no camera. What would I change? Smaller (lower kv) motors. Different props? Thanks

The kv of the motor has more to do with prop size and battery voltage so you'd probably be looking at a 1800-2300 kv motor swinging a 5 or 6 inch prop on 3 or 4 cell. I built a blackout spider hex last year running pixhawk and it worked awesome. It was so cool to watch that little guy fly auto missions.
In the end its still going to be a 250. Depending on the FC that you use you could just tune it down a little so its not so crazy fast. You can also build it a little heavier so its a little slower, maybe run a bigger battery, it cant be too heavy though.
