Need for Programmable ESC's?

I am new to Multicopters.

Is there really a need for programmable ESC's and if so, can anyone tell me what it is?

I am building a Quad.

if there not programeable the settings are set in stone. Things like low voltage cuttof,,,, if that is on it'll wind up shutting off motor in flight sooner or later.

I am looking at the Turnigy Plush 10 AMP ESC now:

It does not indicate which programmers would work with it. Can some one recommend a good one for that ESC?
