most pain in the butt about building

For me it's the ESCs. I've burned out like 4 ESCs, ended up swapping out ESCs for the same build twice. It's been my fault but for a newbie I think you really need to buy the ESCs that will make it easy for you to solder the motors to if you don't wanna use those bullet connectors. I finally found these great ESCs for small quads that are a DREAM. They are set up to run perfect out of the box too and have those nice tabs sticking out right in front to solder onto which I love, not many have that feature that I've seen too. Don't even bother trying to open the cases off those escs that have wires connected to the center of them to unsolder them and solder the motors directly to it cause I've tried that and you can just end up blowing it up starting it on fire and stuff unless youre like an expert solderer cause that's what I tried to do at first and started 3 fires and damaged a motor even. Do yourself a favor and just get these like me. They will be your go to esc!

Just a comment for anyone starting out and putting together their own aircraft. Please take time to get proper soldering iron and practice with it using good rosin core solder. Do not begin with non or low lead solder. An adjustable soldering iron up to 80 watts is all you should need for these smaller craft and max power will solder big battery power leads. The bigger the mass, the higher the heat. I have been soldering for more years than I will say, but in the last 7 years or so of messing with RC helis and multi-rotors I have never burnt anything up. It just should not happen if using right stuff and taking a little care.
