or will it do an adequate job for a beginning FPV'r?

I never fly for more than an hour at a time (yet at least.) Based on your optimism about the lengthy battery life using that 2500mah beast, I decided to go considerably smaller and settled on a 610 mah 20c that I could get at a better price so I bought two. http://www.hobbyking.com/hobbyking/store/uh_viewItem.asp?idProduct=58544 It also comes with a JST connector which is what I believe the RX has and I know the monitor has.The low discharge should not be an issue for your ground gear. At 2500mah it should last a while - and hopefully not add too much unwanted weight if you're strapping it to your headset .
I think the common goggles/headset batteries are a good deal smaller/lighter than 2500mah. Maybe 350-400mah.
I was able to power my 7" monitor, small DVR and video receiver on an old 3S 5000mah battery longer than I wanted to fly. So depending on your stamina - maybe buy a few spares.
Finally powered it all up and it turns out that it runs the battery from a full 4.2v down to 3.87 in one hour on the RX and down to 3.9 on the view screen. So I'll be able to go right around two hours before needing a recharge. I can live with that. These 610mah batteries are small and fit on the brim of my headset hat combo that I created. I'm glad you mentioned the smaller 450 mah batteries that other sets use. I would have overspent and over powered with that big battery I was looking at. These 610 mah batteries are perfect.Keep in mind that you will not be running down the battery to zero, so your estimates will be a bit off. You're probably looking at under an hour for the batteries, but you'll have to power everything up to see for sure.
