Help: Throttle goes from "off" to verticle flight! Will not hover.

Hi all,

I am having a problem with the throttle settings on my multirotor (See the bottom of this post for my design specs). Briefly, I am using a MultiWii FC with a Turnigy 9X remote. The remote is bound and the subtrims are set so that the FC reads the correct stick ranges of the remote. The FC has been initialized and I can arm the multirotor. All is well until I give it some throttle.

The problem: Once the quad is armed, the throttle is in the off position and the motors are off. Good. But once I give the throttle stick the SMALLEST possible increase in throttle, the motors start spinning up and the quad lifts off the ground! Before I say more, it lifts off vertically straight up (good at least). Here lies the problem. The quad will not hover. Period. The motors go from 'off' to 'on and instantly start carrying the quad into the air'. There is no intermediate so I can either make the quad gain altitude or stop the rotors and the quad comes crashing down. It will not hover.

What could be the problem?
----Could my ESCs not be calibrated correctly? (I have calibrated the ESCs multiple times using the MultiWii calibration code).
----Could my motors be too powerful?
----Could my batter be too "big"?
----Could my flight controller not be regulating the correct signal to the ESCs?
