Confused about props

I am running the standard DJI props, but I am confused why the manual says..

8" props with a 4S
10" props with a 3S

Can anyone tell me if I should be using 8" or 10" with my 3S 2600 Turnigy Nano-Tech batteries?

With the lighter set-up a smaller prop I have found to be more stable in FFF and windy gusts but the 8" props were way too small for my 3S set-up. You want to try and achieve hover at "mid-stick" throttle while in Manual mode.

Motor Kv has to do with set-up as well, Higher Kv motors or higher voltage packs will product more power allowing you to spin that smaller prop.

My best blend so far has been 9" Graupners on my 3S set-up but hover was just a tad above mid-stick

I was thinking of going to Graupners, kinda concerned about mounting them on the standard DJI motors and having to ream them out.

Yea, using stock DJI motors you'll have to team out just about any aftermarket prop under 10" and most even at 10" unfortunately.

What about the keying on the shaft, just ignore that I guess? and to do that a metric reamer would be needed?

Yup just ignore and ream out to 8mm.
With the Graupners I used a spacer from gothelirc.com as well under the prop to make sure they were tight since the Graupner root is thinner like below.
