I use temperature telemetry for batteries, i don't care about ESC temperature because there is no way to overheat them if they're big enough to handle the maximum current. LIPO temperature is important to avoid puffing them when go near the limits.

Motors should start in the exact same time. It still seems like a ESC problem. Just try to move the ESC to other motors and see the result.

If everything is ok and suddenly goes crazy it sounds more like a ESC problem or contact issue. Are you flying in a hot area? I suggest check the wiring for poor contacts, then monitor the ESC temperature.
