From what I heard, the best thing for snow is that little polarizing disc. same for any bright or reflective environment.

I'd also guess that RAW would be the best Protune setting if you're going to use Protune as you'll be able to tweak it till it's just right in AP/AF or whatever. Unless you need to give them files right away and they don't have software to tweak. IrisAerial's suggestion of filters would be good if you can get them... off to look up gopro filters now.
