I'm usually free any weeknight, and I'm way up north, so Morristown works better for me.

I'll be out of town on the 8th, but I'm free in the evening on the 31st.

I can't speak on the FPV stuff, but the copter looks good. Buy a ton of battery and bullet connectors, I found that building my first couple of multi rotors I had some major growing pains. I'm a pretty good solderer now, haha.
