Motor Thrust & Qty Question

I know the general rule of thumb for quads is to select motors with twice as much thrust per AUW, but does that hold true for hexis and octos? I was wondering if we can get away with using smaller motors on those.

It really depends on what you want to do. Underpowered copters are typically cheaper, lighter, and more efficient, but they're also far less capable in the wind, and in the case of Octos, if you don't have a margin of reserve power, it will still crash if you lose a motor, just like a quad.

IMO, if you aren't building a well powered Octo which CAN fly with a motor out, you might as well stick to a quad, which has half as many failure points.
