Is there a way to test which way the the motors spin, so that i can setup & solder up the wire to the esc without the radio (it's coming tomorrow)? or do i just wire them all up & then reverse them through the radio?

No way to spin it up without the radio. You can solder the ESC's and the battery pigtail to the power distribution board. The ESC's have bullet connectors and you can just swap any two wires to change the motor direction to get them spinning in the right direction. But leave the props off during setup.
